Xavier Rousset MS

Xavier started his career working at various prestigious restaurants in France, such as two Michelin star Le Laurent in Paris and Villa Belrose in St Tropez before becoming Ruinart UK Sommelier of the Year and the youngest Master Sommelier in the world. He was appointed Head Sommelier at the Michelin Starred Le Manoir aux Quat Saisons working with the esteemed Raymond Blanc.

Along with business partner Agnar Sverrisson, Xavier set up Texture in 2007 – winning a Michelin star within only three years, as well as three rosettes in the AA Guide. Xavier also opened 28-50 Wine Workshop during this time.

Mark Jarvis (executive chef)

Having worked in kitchens since he was 16, Mark Jarvis started at Le Manoir aux Quat’Saisons in 2005 where he worked alongside Xavier for the first time.

Part of a line-up of young talent working under Raymond Blanc at the time, Mark cooked alongside the likes of Agnar Sverrisson, Robin Gill and Ollie Dabbous before being entrusted with the opening of Blanc’s pub, The Thatch.

Mark worked with Xavier again at his three years at Michelin-starred Texture as a Sous Chef, before his first role as Head Chef at the Blueprint Café, where he took over from the legendary Jeremy Lee. After a year, opportunity knocked again, this time from The Bingham Hotel in Surrey where he stayed for 2 years heading up the kitchen as Executive Chef.

Mark’s first solo restaurant, Anglo (Farringdon) is the manifestation of his own experiences and his desire to create a restaurant with all the elegance of fine dining, with none of the pretention. He also hosts a residency restaurant at TRADE, Soho.


Sabrina Barreiros (group operations manager)

French-born Sabrina Barreiros found her way to the UK as a student in 2007, where she worked, initially as a stagiaire, for Hotel du Vin. For over 5 years, Sabrina grew with the company, eventually managing the group’s new openings, including the London sites of Bistro du Vin. In 2012, Sabrina was appointed restaurant manager at 28-50 in Marylebone and Mayfair for three years, before moving to Jason Atherton’s Social Wine and Tapas.

Sabrina has been overseeing operations at Comptoir Café & Wine in Mayfair and Blandford Comptoir in Marylebone since opening and is now looking forward to seeing what the Gunmakers steak house brings.
